Sher Wagyu beef is assessed for marbling and meat quality by independent graders accredited by Ausmeat. Marbling is graded on a scale of 0 - 9 with 9 being the highest in the Ausmeat grading system. Grade 9 includes meat that would grade up to 12 in Japan.
Sher Wagyu is primarily from Wagyu x Holstein breeding but also includes higher percentage and fullblood Wagyu. The beef is packaged into three labels based on marble score and meat quality, not on breed perecentage.
